For my first Ham Ji Bak Carrollton review, I want to share what I experienced during my second visit to this Korean BBQ restaurant.
I had already visited Ham Ji Bak once before and enjoyed the Pork Set, especially the marinated galbi. That experience gave me a reason to return, but this time I wanted to find out whether the Beef Set would be even better.
We ordered the Beef Set, Naengmyeon, and Gopchang Jeongol. The beef turned out to be the highlight of the meal, with a tender texture that still offered a satisfying bite. I also enjoyed the cold noodles and was pleasantly surprised by the rich gopchang hot pot.
Ham Ji Bak is not necessarily where I would go for an inexpensive everyday dinner. However, after trying both the pork and beef sets across two visits, I can understand why someone might choose it when meat quality is a priority.
Here is how the Beef Set compared with my previous Pork Set, what I thought of the accompanying dishes, and whether I believe the higher cost was worthwhile.

Returning to Ham Ji Bak Carrollton
Although this is my first written review of Ham Ji Bak on Real Eats Dallas, I had eaten here once before.
On that earlier visit, I ordered the Pork Set and particularly enjoyed the marinated galbi. The seasoning and flavor made a positive impression, so I was interested in trying another part of the menu.
For my second visit, I chose the Beef Set rather than repeating the pork. I was curious whether it would offer a noticeable improvement in flavor and texture, especially since Ham Ji Bak is relatively expensive compared with some of my usual Korean dining choices.
The dining area was clean and organized, with a familiar Korean BBQ setup. I liked that the atmosphere was comfortable without feeling overly formal.
For me, the appeal of Ham Ji Bak is primarily the food. I wanted to enjoy good meat, compare it with what I remembered from my previous visit, and decide whether I would choose the restaurant again for a more special meal.

What I Ordered at Ham Ji Bak Carrollton
For this visit, we ordered three dishes: the Beef Set, Naengmyeon, and Gopchang Jeongol.
I liked this combination because each dish had a different role in the meal. The grilled beef was the main attraction, the cold noodles provided a refreshing contrast, and the gopchang hot pot added a rich, comforting soup.
Although I enjoyed all three, the Beef Set was the clear winner for me. It also gave me a better basis for comparing Ham Ji Bak’s beef and pork offerings after two visits.
Beef Set: Better Than the Pork Set?
The Beef Set was easily my favorite part of this visit.
I had already enjoyed the Pork Set, particularly the marinated galbi, so my expectations were fairly high. However, the beef ended up leaving an even stronger impression.
One of the first things I noticed was the marbling. The beef looked appealing before cooking, and the aroma from the grill made me look forward to eating it.
What stood out most was the texture. The beef was tender, but it still had a pleasant chew rather than becoming so soft that it lacked character.
That balance is something I particularly enjoy in Korean BBQ. I want meat that is easy to eat but still gives me a satisfying bite.
The beef also had a rich flavor without feeling excessively heavy. I enjoyed the natural taste of the meat and did not need an especially strong sauce to make it satisfying.
Compared with the Pork Set from my earlier visit, I personally preferred the Beef Set. The pork was good, especially the marinated galbi, but the beef offered a combination of tenderness and flavor that was more memorable to me.
That does not mean I would discourage someone from ordering the Pork Set. I had a positive experience with it, and I can understand why someone who enjoys marinated pork galbi might choose it.
However, after trying both sets, I would personally spend more for the Beef Set when visiting Ham Ji Bak for a special Korean BBQ meal.
My recommendation: If meat quality and texture are your priorities, the Beef Set would be my first choice based on these two visits.

Naengmyeon: A Refreshing Combination with Grilled Beef
We also ordered Naengmyeon to enjoy alongside the Beef Set.
I often like eating Korean cold noodles with grilled meat because the different temperatures and flavors create a satisfying contrast.
That was exactly what I enjoyed at Ham Ji Bak. After several bites of rich grilled beef, the cold noodles felt refreshing.
Instead of adding another heavy dish, the Naengmyeon helped balance the meal. I enjoyed switching between the noodles and the beef rather than focusing exclusively on the meat.
I would not say the Naengmyeon was the main reason to visit Ham Ji Bak. The beef was much more memorable, but the noodles were a good supporting choice.
For someone who enjoys cold noodles with Korean BBQ, this is a combination I would consider ordering again.

Gopchang Jeongol: Rich Broth and Generous Portions
The Gopchang Jeongol was another highlight of my second visit.
I had mainly returned to try the Beef Set, so I was pleased that the hot pot turned out to be satisfying as well.
What impressed me first was the generous portion. It felt like a substantial dish to share alongside the Korean BBQ rather than a small addition to the meal.
I was also pleased with the quality of the gopchang. I enjoy beef intestines when they have a rich flavor and satisfying texture, and the version served here left a positive impression.
The broth was deep, savory, and rich enough to be enjoyable on its own. That was especially important because a good Gopchang Jeongol needs more than just a generous serving of intestines.
I have tried gopchang dishes at other restaurants around Carrollton, including restaurants that specialize in them.
One example is Dalgopchang Carrollton, where I have also enjoyed a flavorful Gopchang Jeongol.
I would not say the two restaurants offer identical experiences. Dalgopchang focuses more directly on gopchang, while Ham Ji Bak gives me another reason to visit for Korean BBQ.
Still, I was impressed that Ham Ji Bak served a gopchang hot pot I enjoyed this much, even though the Beef Set remained the main attraction.
If I returned with a group and wanted something warm and rich to share alongside the meat, I would happily consider ordering the Gopchang Jeongol again.

Price and Portion Size: Is Ham Ji Bak Worth It?
One thing I would consider before visiting Ham Ji Bak is the cost.
Based on my experience, it is relatively expensive compared with the Korean restaurants I might normally choose for an everyday meal.
However, I do think the Beef Set made the higher cost easier to accept.
The tenderness, marbling, and rich flavor of the meat were noticeably satisfying to me, especially after comparing the experience with the Pork Set from my previous visit.
The Gopchang Jeongol also came in a generous portion and had a flavorful broth. Along with the refreshing Naengmyeon, it helped make the meal feel complete.
For me, the question is not simply whether Ham Ji Bak is expensive. It is whether the experience justifies choosing it over a more affordable Korean BBQ restaurant.
If I wanted a casual, inexpensive dinner, I might choose somewhere else. However, when I want to focus on meat quality or enjoy a more special Korean BBQ meal, Ham Ji Bak becomes a stronger option.
I would also be more likely to choose the Beef Set again instead of repeating the Pork Set, because the beef was what made this visit particularly memorable.

Overall Experience at Ham Ji Bak Carrollton
My second visit to Ham Ji Bak gave me a clearer understanding of what I enjoy most about the restaurant.
I had already liked the Pork Set during my first visit, particularly the marinated galbi. However, the Beef Set impressed me even more because of its tenderness, satisfying bite, and rich flavor.
The Naengmyeon worked well as a refreshing contrast to the grilled meat, while the Gopchang Jeongol added a flavorful and generous hot pot to the table.
I also appreciated the restaurant’s clean and organized dining environment. It provided a comfortable setting for enjoying the different dishes without making the atmosphere feel overly formal.
Although I would not choose Ham Ji Bak solely for an inexpensive meal, I was satisfied with the food quality during this visit.
After eating here twice, I now have a definite preference for the Beef Set when I want to enjoy Korean BBQ at Ham Ji Bak.
My Final Verdict on Ham Ji Bak Carrollton
My second visit to Ham Ji Bak Carrollton was even more satisfying than my first, primarily because of the Beef Set.
My favorite order: Beef Set. I especially enjoyed the tenderness of the meat and the way it retained a satisfying chew.
Compared with the Pork Set: I enjoyed the marinated galbi during my previous visit, but the Beef Set offered a more memorable combination of flavor and texture for my taste.
Best accompanying dish: Naengmyeon. The cold noodles provided a refreshing contrast to the rich grilled beef.
Another standout: Gopchang Jeongol. I liked its generous portion, quality gopchang, and deep, rich broth.
What to consider: Ham Ji Bak is relatively expensive for an everyday Korean dinner, but I found the Beef Set satisfying enough to consider it for a more special meal.
Would I return? Yes. I would choose the Beef Set again, and I would also consider sharing the Gopchang Jeongol with a group.
If you are looking for Korean BBQ in Carrollton and meat quality is your main priority, Ham Ji Bak is worth considering based on my experience. After trying both the pork and beef sets, the Beef Set is now my personal recommendation.
